Due to fire damage, Sub Rosa Bakery will be closed for a time. We hope to reopen in the Autumn of 2025.
March 21st, 2025 UPDATE:
First and foremost, we want to express our deepest gratitude to everyone who has continued to support us during this time and our apologies for the delay in giving you all an update. The funds raised so far helped immensely to soften the blow of the sudden loss of employment for many of our employees and will help subsidize costs for the rebuild that we are unsure that insurance will fully cover. With your support we feel more confident that we will be able to rebuild the bakery!
We are fully committed to reopening Sub Rosa in the same location and our current deadline– or lifeline– for re-opening is November 2025. This date is of course subject to change but it is our every intention and hope to reopen by then. We are currently in the final stages of selecting our contractor and team that will do the heavy work of putting everything back together. First will be the framing and completion of the roof which should be under way by April. The plans have already been submitted to the City and approved by CAR. After that, we will be in close contact with the City to clear all permits for the rest of the building process, including all plumbing, electrical, and mechanical. The winter storms and related power outages pushed us back about 7 weeks but if we can start the major building projects by May, we should be on track to open by the year anniversary of the fire (November 24th).
In other related news, we have made the difficult although necessary decision to take this time to change our central hearth: the Oven. We have written about this in more detail here.
Other changes include improvements to the front of house design: this includes a new water station, bus bin station, and bread shelves (!), as well as a rearrangement of bathroom and mechanical closets. We also plan on investing in a bigger mixer. All of this should mean an improved bakery for everybody on every level. We will be better equipped to serve all of you the bread and pastries we have come to be known for in a space that feels warm, welcoming, and alive. We also have some new recipe development in the works which we are very excited about but must remain sub rosa for now.
We continue to mill at our offsite location, Triple Cross Brewery in Fulton Hill, and our flour is available at fine establishments all over Richmond. You can see the full list scrolling below. Additionally, we are looking into using other spaces around Richmond to continue our baking “pop ups,” and will update our website and instagram pages as those events happen. Please look out for us at the Birdhouse Market on Tuesdays come May!
